Shortbread wedges and fresh fruit puree

Recipe Ingredients for Shortbread wedges

1/3 cup sugar
1 cup margarine
2 1/2 cups all-purpose flour
1 tsp vanilla
1/4 tsp almond extract
2 cups fresh raspberries
1 tsp honey

Recipe Directions for Shortbread wedges

  1. Shortbread:Heat oven to 350. Line 2 9-inchpie pans with foil-so foil extends over pan-spray with nonstick cooking spray.

  2. In a large bowl, combine sugar and butter;beat until fluffy. Add flour, vanilla and almond extract; mix well. Dough will be crumbly.Divide dough in half, press into bottom of pans. Bake for 18-22 minutes.

  3. Remove from oven set aside to cool

  4. Puree: Combine raspberries and honey in blender, until almost smooth. Serve on the side for drizzeling or dunking.
