Shortbread for CHristmas, Burns' etc.

Recipe Ingredients for Shortbread

250 g unsalted butter
1/2 cup sugar
2 cups all purpose flour
3/5 cup rice flour
2 tsp sugar

Recipe Directions for Shortbread

  1. preheat oven to 315F

  2. line 2 baking trays with baking parchment

  3. cream butter and sugar together until light and fluffy

  4. add flours and a pinch of salt and mix to form a soft dough, divide into two

  5. refrigerate for 20 minutes

  6. line both trays with dough and make indents for slices

  7. bake for 30-35 minutes until golden (not dark)

  8. cool intrays, then store in airtight container.
