Mini Shortbread biscuits for on their own, sandwiched with the filling of your choice or as a gift.

Recipe Ingredients for Shortbread Kisses

75 grams Flour
1 tablespoon Cornstarch
50 grams butter
24 grams sugar

Recipe Directions for Shortbread Kisses

  1. Preheat Oven 160c Fan/Gas 4

  2. Cream room temp butter and Caster suagr together with a spoon until combined. Add a couple of drops of Vanilla essence

  3. Mix Flour and cornstarch together on another bowl, sift into butter mix and stir to combine well

  4. Bring dough together with fingers and shape into a flat cake - try to handle as little as possible to keep the texture 'short', wrap in clingfilm and chill for 15 minutes.(any longer will make the dough too hard to handle)

  5. Lay a sheet of cling film on a work surface, unwrap the dough and lay on clingfilm, cover with another layer of cling film and roll dough to approx 1/4 in thick. Remove top sheet of cling film and cut out biscuits using small cutters. Lay on a baking sheet ready to bake. Any leftover dough can be gathered up and rolled again for more biscuits.Before baking sprinkle with a little sugar to finish off.

  6. Bake in centre of oven for 10 - 12 minutes until lightly browned. leave on baking tray for 10 mins to cool then lift carefully to cooling rack to cool completely.
