Shitake Mushroom Fritatta (Specific Carbohydrate Diet) by MrBlink

Recipe Ingredients for Shitake Mushroom Fritatta (SCD) by MrBlink

10 eggs
5 ounces shitake mushrooms, sliced
1 onion, sliced
2 tablespoons olive oil
7 1/2 ounces farmer cheese
1 tablespoon oregano
1/8 teaspoon ground thyme
1 pinch of salt
1 pinch of pepper

Recipe Directions for Shitake Mushroom Fritatta (SCD) by MrBlink

  1. Preheat oven to 350 degrees.

  2. Heat oil in 9-10 inch skillet

  3. Saute mushrooms, onions, thyme and oregano until brown (about 10 minutes)

  4. Turn off heat, whisk eggs until frothy

  5. Add cheese to eggs and mix

  6. Pour into skillet, turn on medium heat

  7. Spoon egg mixture inward to help cook eggs. Continue until almost set up.

  8. Bake for 12 minutes.
