This recipe started out with our family putting whatever healthy ingredients they wanted on shish kabobs for the rotissarie, but when they started falling apart we turned it into a yummy stir-fry! =)

Recipe Ingredients for Shish Kabob Stir-Fry

2 apples
1 cup mandarin oranges
2 onions
1 chicken breast
2 medium potatoes
1/2 lb frozen shrimp
1 tsp salt
1 tbs oil

Recipe Directions for Shish Kabob Stir-Fry

  1. Chop chicken, onion, apple, and potatoes into large chunks.

  2. Heat oil on med-high in non-stick skillet. (I recommend a flavor-infused grapeseed oil.)

  3. Sprinkle with salt.

  4. Cook for approximately 5 minutes with lid on. Mandarine Oranges will dissentegrate and liquid will develop in the pan.

  5. Continue to stir fry with the lid off until meat is cooked through.
