Great combination of tomato soup, rice, ground beef, and potatoes.

Recipe Ingredients for Shipwreck Casserole

2 medium potatoes, sliced thin
1 medium onion, sliced
16 ounces kidney beans, drained
1/4 cup rice, uncooked (regular long-grain white rice is best, but I've made it with instant rice and couldn't tell the difference)
1 cup celery, diced
1 pound lean ground beef, uncooked
10 1/2 ounce tomato soup
1/2 cup water

Recipe Directions for Shipwreck Casserole

  1. Grease a 2-1/2 quart casserole dish.

  2. Layer the above ingredients in the order listed.

  3. Cover and bake at 350 degrees for 1 1/4 hours or until done.

  4. Serve hot. May be prepared ahead. Can be frozen.
