A delicious and fairly healthy portabella panini sandwich. Feel free to substitute white mushrooms for the portabellas.

Recipe Ingredients for Sherry's Portabella Panini

3 cups whole mushrooms
1 cup roasted red peppers
1/4 cup balsamic vinegar
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
4 cloves garlic
4 slices mozzarella cheese
8 slices bread

Recipe Directions for Sherry's Portabella Panini

  1. Slice mushrooms and place in a shallow dish

  2. Drain and coarsely chop peppers

  3. Combine vinegar, olive oil, basil, oregano, and garlic

  4. Pour half of vinegar mixture over mushrooms

  5. Spread peppers evenly over mushrooms

  6. Pour remaining mixture over mushrooms

  7. Let sit for at least 15 minutes

  8. Transfer mixture to skillet

  9. Cook over medium heat until mushrooms appear done

  10. Toast bread in toaster

  11. Divide mixture into fourths and make sandwiches

  12. Put one slice of mozzarella on each sandwich

  13. Heat sandwiches in George Foreman until cheese melts and filling is hot

  14. Serve and enjoy!
