sort of what you would make for eggplant parmesan, but serve sauce separately.

Recipe Ingredients for Sherry's eggplant appetizers

2 eggplants
3 egg whites
3 tablespoons water
1 cup fine dry breadcrumbs, plain
1/4 cup grated Parmesan cheese
1 1/2 teaspoon ground black pepper, coarse

Recipe Directions for Sherry's eggplant appetizers

  1. mix egg whites and water till frothy with whisk.

  2. mix breadcrumbs with pepper and parmesan cheese.

  3. peel and cut eggplant into 1/2 inch slices.

  4. dip into eggwhites, then in breadcrumbs.

  5. bake on cookie sheet which has been sprayed with pam, 400 15 minutes per side. 30 minutes all together.
