Recipe Ingredients for Sherry's Chicken tagine

10 chicken drumsticks, skinless
7 cloves garlic, minced
2 tbsp olive oil
1/4 cup cilantro, chopped
1 pinch of saffron threads
2 tsp paprika
2 tsp ground cumin
4 tbsp sun-dried tomato
2 tbsp olive oil
1 Salt and pepper
1 cup onion, diced
1/2 leek, cleaned, trimmed and sliced
2 cups water
1/2 tsp cinnamon
1 cup tomatoes, chopped
15 ounce chickpeas, rinsed and drained
1/2 cup golden raisins

Recipe Directions for Sherry's Chicken tagine

  1. Rub skinless chicken pieces with a mixture of ground up: garlic, sundried tomatoes, 2 tbsp olive oil, honey, cumin cilantro and paprika.

  2. Let marinate for several hours or overnight. Take out half hour before cooking.

  3. Brown chicken pieces in the 2nd 2 tbsp of olive oil in dutch oven; take out, brown onions and leek in the same pot.

  4. Add water or stock, tomatoes, chickpeas and raisins; bring to simmer. Add chicken pieces in. Then put in a 350 degree oven, covered, and bake for 45 minutes.
