Simple tasty dish for boneless skinless chicken breasts

Recipe Ingredients for Sherried Chicken

24 oz Fresh Boneless Skinless Chicken Breasts
6 teaspoon Vinegar Wine White
2 tbsp Olive Oil, Extra Virgin
1 clove Garlic
2 tbsp Parsley
1 tbsp Butter
6 oz Sherry
6 oz Mushrooms

Recipe Directions for Sherried Chicken

  1. With breast halves (3) flat on cutting board, divide each breast half in half by cutting through the middle, dividing top half from bottom half.

  2. Season chicken with sodium-free seasoning salt (Mrs. Dash's or similar works well).

  3. Combine vinegar, olive oil, garlic, and parsley in bowl.

  4. Saute half the chicken in half the vinegar mixture about 2 mintues per side, turning once, to brown chicken.

  5. Saute remaining chicken in remaining vinegar mixture.

  6. Place all browned chicken in greased shallow baking dish.

  7. Deglaze saute pan with 4 oz (half cup) sherry.

  8. Add melted butter to sherry in saute pan and pour over chicken in baking dish.

  9. Bake uncovered in 350 degree oven for 30 minutes.

  10. After 30 minutes, add mushrooms to chicken in baking dish along with last 2 oz of sherry.

  11. Bake 5 minutes longer.
