Chicken breasts and mushrooms in a sherry sauce.

Recipe Ingredients for Sherried chicken

8 oz Fresh Boneless Skinless Chicken Breasts
2 clove Garlic
0.66 tbsp Extra Virgin Olive Oil
4 oz Mushrooms
0.33 Serving Sherry
4 oz Fat Free Half and Half
2 tsp Bouillon
0.125 cup Cornstarch
1 tbsp Light Butter with Canola Oil

Recipe Directions for Sherried chicken

  1. Preheat oven to 350.

  2. Trim fat from two chicken breasts. Heat oil to medium. Saute garlic for one minute. Add chicken breasts. Saute for 4 minutes on each side.

  3. In a jar with a tight fitting lid, shake the half and half, chicken granules, and cornstarch until smooth.

  4. Remove chicken breasts to casserole. Add butter and sherry to the pan drippings. Stir to scrape pan. Add mushrooms. Cover skillet and saute until limp.

  5. Add half and half mixture to skillet. Cook over medium heat until mixture thickens and and begins to form small bubbles. Stir frequently.

  6. Pour over chicken. Cover casserole and bake for 30 minutes.

  7. Serve over rice or noodles.
