Delicious pumpkin muffins... perfect snack!

Recipe Ingredients for Sherbears Pumpkin Muffins

3 1/4 cups whole wheat flour
2 tsp baking soda
1 tsp ground nutmeg
2 cups pumpkin
1/2 tsp salt
1 tsp cinnamon
1 1/2 cups Splenda
2/3 cup unsweetened applesauce
4 whole eggs

Recipe Directions for Sherbears Pumpkin Muffins

  1. Preheat oven to 350.

  2. Grease and flour loaf pan or cupcake tray.

  3. Mix dry ingredients.

  4. Add wet ingredients.

  5. Blend.

  6. Place in trays or loaf pan.

  7. Bake for 20-30 minutes for muffin tray.

  8. Bake 1 hour (or until top springs back) if using a loaf pan.

  9. ENJOY!
