A vegetable and soya mince pie with mashed potatoes on top.

Recipe Ingredients for Shepherd's Pie (without soya mince included)

1 onion
2 oz mushrooms
2 carrots
2 tablespoon flour
300 ml chicken stock
1 tablespoon chopped tomatoes
1 lb potato
25 grams butter
60 ml semi skimmed milk
1 tablespoon olive oil

Recipe Directions for Shepherd's Pie (without soya mince included)

  1. Chop onion, mushroom and carrots, and fry. Add soya mince, cook for 8-10 minutes.

  2. Add flour and cook 1 minute. Then add stock and chopped tomatoes. Cook, stirring until thickened, then cover and simmer for 25 minutes

  3. cook potatoes and mash with butter and milk.

  4. spoon mixture in 3 pint pie dish and add mashed potatoes. Bake at 200 C (400 F) mark 6 for 15-20 minutes.
