Shepherd's pie of mixed veggies and cream of mushroom gravy, topped with mashed cauliflower instead of potatoes!

Recipe Ingredients for Shepherd's Pie, Vegetarian, sub caulliflower

3 cups cauliflower
2 tbsp sour cream
1/4 cup butter
1/2 tsp pepper
1/2 tsp garlic powder
1 cup onion, diced
2 cups mushrooms, sliced
26 oz cream of mushroom soup
1 tbsp olive oil
2 cups corn
2 cups peas
2 cups green beans
2 cups carrots

Recipe Directions for Shepherd's Pie, Vegetarian, sub caulliflower

  1. preheat oven to 400

  2. steam cauliflower til soft

  3. add butter, sour cream, garlic powder

  4. mash

  5. in oil, fry up onions, when transparent, add mushrooms and more butter

  6. in baking dish, add all other veggies

  7. mix in pepper and mushroom soup

  8. add mushroom/onions, mix

  9. spread cauliflower mash on top

  10. bake for 30 min
