Shepherd's pie made with sweet potato

Recipe Ingredients for Shepherd's Pie, with Sweet Potato

1 cup TVP
1 serving Extra Virgin Olive Oil
5 clove Garlic
1 large Onions
6 medium Carrots
3 stalk, small (5" long) Celery
16 oz Sweet Peas
3 Teaspoon Vinegar
3 medium Sweetpotato
0.5 cup Organic Vegetable Cooking Stock
1 tsp Garlic Powder
1 serving Flakes Minced Onion
1/4 tsp Sea Salt

Recipe Directions for Shepherd's Pie, with Sweet Potato

  1. Bake sweet potatoes until tender. Saute veggies and TVP until mostly tender. Add vinegar.

  2. When potatoes are done, mix with stock, garlic powder, salt, and minced onions. Spread on top of veggies.

  3. Bake at 350 degrees for 30-45 mins, until bubbling at the bottom (use glass casserole dish to observe this)
