Shepherd's Pie with Sweet Potato Crust

Recipe Ingredients for Shepherd's Pie with Sweet Potato Crust

15 ml olive oil
1 onion
1 carrot
2 kg lean ground beef
250 ml beef stock
800 ml plum tomatoes
25 ml Worcestershire sauce
250 ml peas
250 ml corn
500 ml sweet potato
10 ml butter
15 ml maple syrup
5 ml paprika

Recipe Directions for Shepherd's Pie with Sweet Potato Crust

  1. heat oil in large deep skillet and add onions and garlic. cook gently about 5 minutes until tender and fragrant Add carrot and celery and cook another few minutes until softened

  2. add ground meat breaking it up with a wooden spoon cook for about 10 minutes until all traces of rareness have disappeared add stock, tomatoes, Worcestershire and cook for about 20 minutes until thick add peas, corn and salt and pepper to taste cool

  3. meanwhile cook the sweet potatoes in a large pot of boiling water for 15 - 20 minutes or until very tender drain well mash sweet potatoes with honey and butter cool

  4. spread meat mixture in the bottom of a 9 x 13 (3L) baking dish Spread mashed sweet potatoes on top place on a larger baking dish to catch any spills and bake in a preheated oven 350F (180C) for 30 to 40 minutes or until browned and bubbling makes 6 - 8 servings
