This "lower fat" version of the original Shepherds Pie is definitely not lower in taste. It's packed with richness that was once only believed unattainable in a low main dish!

Recipe Ingredients for Shepherds Pie (Reduced Calorie)

2 lbs potatoes, peeled, quartered
1/4 tsp dried thyme
1/4 tsp dried rosemary
1/2 cup fat free half and half
1 tbsp light butter
1/2 tsp salt
1/4 tsp ground black pepper
1 lb extra lean ground beef
1 onion
1/2 cup beef broth
1 tbsp ketchup
1 tbsp worcestershire sauce
1 1/2 tsp cornstarch
1/4 tsp ground black pepper
1 1/2 cups frozen corn
1 tbsp chopped fresh parsley

Recipe Directions for Shepherds Pie (Reduced Calorie)

  1. To make Potatoes - In a medium saucepan, combine the potatoes, thyme and rosemary. Cover with water and bring to boil ove rhigh heat. Reduce the heat to medium, cover and simmer for 20 mins oruntil tender. Drain and return to the pot. Add the half & half, butter, salt and pepper and mash until smooth.

  2. To make the meat filling - Coat a large nonstick skillet with nonstick spray and warm over medium high heat. Add the beef and onion and cook, breaking up the meat and stirring for 10 mins or until the meat is no longer pink and the onions are softened. Drain the fat.

  3. In a measuring cup, combine the broth, ketchup, worcestershire sauce, cornstarch, and pepper. Add to the beef and cook, stirring until bubbly and thickened. Stir in the corn and parsley.

  4. Preheat oven to 350 F. Transfer the beef to shallow 2 quart casserole. Drop large spoonfuls of the mashed potatoes on top of the meat mixture. Smoth the potatoes over the meat and use a cake spatula to smooth evenly. Bake for 40 minutes or until potatoes are golden.
