Shepherd's Pie Recipe

This recipe is adapted from the 1995 version in Cooking Light magazine.

Recipe Ingredients for Shepherd's Pie

16 oz Ground Beef
1 1/2 cup Beans, Snap, Green
1 cup, chopped Onions
0.33 tablespoon Oregano
1 tsp, ground Basil, Dried
1/4 teaspoon Thyme
5 oz Organic Shiitake Mushrooms Packaged
1/4 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
4 oz Wine
14 1/2 oz Tomatoes
24 oz Potatoes
80 1/2 grams Milk, Reduced Fat, Fluid, 2% Milkfat
1/2 tsp Old Bay Seasoning
0.67 cup Peas, Green
1 tbs Worcestershire Sauce

Recipe Directions for Shepherd's Pie

  1. Cut the green beans into 1/2 inch sections, steam for 3 minutes, add frozen peas for a minute. Drain and set aside.

  2. Chop mushrooms and onion. Peel and cube potatoes.

  3. Cook meat, onion and garlic in a large nonstick skillet of medium high heat until browned. Drain well, add spices and cook for 1 minute. Add mushrooms, cook 2 minutes. Stir in flour. Gradually add wine and Worcestershire sauce, stirring constantly. Add tomatoes and cook 2 minutes, or until thickened. Add green beans.

  4. Boil potatoes until tender and drain. Mash and add milk.

  5. Assemble the casserole - I sometimes put a layer of potatoes on the bottom as well as the top.

  6. Bake in a 375F oven for 30 minutes and then broil until the top is browned.
