Weight Watchers crustless shepherds pie

Recipe Ingredients for Shepherd's Pie

1 tbsp butter
2 tbsp all-purpose flour
1 cup chicken broth
1 tsp salt
1/4 cup water
2 cups chicken breast, cooked,cubed
2 carrots, peeled,sliced,blanched
1/4 cup spinach,frozen
1/2 onion,finely chopped
1/2 cup frozen corn kernels
1/2 cup evaporated fat-free milk
1/2 cup 1% milk
1 tsp ground thyme
1/2 tsp dried marjoram
3 russet potatoes
1 tbsp grated parmesan cheese
1/4 tsp paprika

Recipe Directions for Shepherd's Pie

  1. Melt butter and add 1 tbsp flour, cook until paste. Whisk in chicken broth, salt and water, simmer until thickened (3-4 min.)

  2. Combine chicken and second tbsp of flour, stir to coat. Stir in carrots, spinach,onion,corn,milk,thyme,marjoram and sauce.

  3. Preheat oven to 400F and spay 2qt casserole with nonstick spray. Add chicken mixture to casserole dish.

  4. Mash potatoes with 1% milk and cover chicken mixture. Sprinkle top with parmesan cheese and paprika. Bake 30-35 minutes until potatoes are golden and bubly.
