Vegetable heavy shepherd's pie. Ingredients can vary and could be made without meat.

Recipe Ingredients for Shepherd's Pie

432 g corn
6 cups Potatoes, Mashed, Home-prepared, Whole Milk Added
4/5 lb lean hamburger
3 carrots, sliced
2 stalks celery, sliced
2 cups broccoli
1 medium onion
1 large tomato, diced
1 large green pepper
1 cup fresh spinach

Recipe Directions for Shepherd's Pie

  1. Cook chopped onion in skillet in olive oil

  2. Add hamburger, brown and drain

  3. Season with salt and pepper to taste

  4. Add other ingredients except spinach, mix well, cover and cook for 30 minutes, stirring often

  5. Mix in spinach and then press into 9x13 dish

  6. Spread mashed potatoes on top and smooth

  7. Cook for an additional 20-30 minutes at 350 degrees

  8. Remove, sprinkle paprika on top and broil until browned

  9. Note: Mushrooms can make a nice addition. A couple tablespoons fresh parsley works well too.
