Recipe Ingredients for Shepherd's Pie

2 1/2 red potatoes, cut into 1 in pieces
1 cup reduced fat milk
1 tsp salt
1/4 tsp black pepper
2 pounds 90% lean ground beef
2 cups carrots, chopped
2 cups onions, chopped
3 garlic cloves, minced
1 cup corn, frozen thawed
3/4 cup crushed tomatoes
1 tablespoon parsley, dried
2 tablespoons tomato paste
1/2 tsp black pepper, cracked

Recipe Directions for Shepherd's Pie

  1. Preheat Oven to 400 degrees

  2. Topping:

  3. Placed the chopped potatoes in a sauce pan, cover with water. Bring to a boil, cook 15 minutes or until very tender. Drain. Place potatoes, milk, salt and 1/4 tsp. pepper in a large bowl. Beat with a mixer at medium speed until smooth

  4. Filling:

  5. Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Remove from pan, drain.

  6. Heat pan over medium-high heat. Coat with cooking spray. Add, onion, carrot, and garlic, saute 8 minutes or until tender. Return beef to pan, stir in carrots and remaining 5 ingredients. Cook 2 minutes.

  7. Spoon beef mixture into a 3-quart casserole dish, top with potato mixture, spread evenly. Bake at 400 degrees for 30 minutes or until thoroughly heated.
