Recipe Ingredients for Shepherd's Pie

2 1tsp Olive Oil
12 oz Mushrooms
8 oz Wine, Table, Red
1 cup, chopped Carrots
1 large Onions
2 clove Garlic
16 oz Beef, Ground, 95% Lean Meat / 5% Fat, Patty
1/2 cup Peas, Green
2 tbsp Butter
0.2 oz Wheat Flour, Whole-grain
2 tbsp Tomato Paste
1 serving Worcestershire Sauce
4 oz Vegtable With Beef Stock Condensed Soup
2 medium Squash, Summer, Zucchini, Includes Skin
6 cup Potatoes, Mashed, Home-prepared, Whole Milk And Margarine Added
1 large Egg, Whole
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Shepherd's Pie

  1. Boil diced potatoes until soft (approx 30 mins)

  2. Preheat oven to 400

  3. Heat 1 tbsp of olive oil over med-high heat. Saute mushrooms. Add 2 oz of red wine. Remove mushrooms from pan.

  4. Saute carrots until beginning to soften, then add onion and garlic

  5. When onions are soft, add the beef. Brown.

  6. Add mushrooms, peas and 1 tbsp of butter

  7. Sprinkle mix with flour and stir. Add tomato paste, worcestershire sauce and rest of wine.

  8. Cook and stir for several minutes. Add stock and simmer until a sauce is thick and somewhat reduced.

  9. Remove from heat and stir in zucchini.

  10. Put meat mix in the pan that it will be cooked in.

  11. Drain and mash potatoes by adding butter and milk.

  12. Add potatoes on top of the beef

  13. Brush potatoes with an egg and sprinkle with parmesan.

  14. Bake for 20 - 30 mins, until potatoes are browned.
