Low fat version of a classic shepherd's pie

Recipe Ingredients for Shepherd's Pie

4 potatoes
1/2 cup fat-free sour cream
2 tbsp Country Crock Light
1/4 tsp salt
4 tsp canola oil
2 cups chopped onions
4 medium Carrots
4 stalk,+medium+7-1/2"+-+8"+long Celery
1 lbs Ground Turkey Breast, 99% Fat-free
6 tbsp cornstarch
2 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 vegetable bouillon cubes

Recipe Directions for Shepherd's Pie

  1. Preheat oven to 400F

  2. Place potatoes in a large saucepan and pour in enough water to cover potatoes.

  3. Set pan over high heat and bring to a boil; reduce heat to medium and simmer 10 minutes, until potatoes are fork-tender.

  4. Drain potatoes, transfer to a large bowl and add sour cream and margarine; mash until smooth, season to taste with salt and set aside.

  5. Meanwhile, heat oil in a large skillet over medium-high heat.

  6. Add onion, carrots, and celery; cook until soft, about 3 minutes.

  7. Add turkey and cook until browned, breaking-up the meat as it cooks, about 5 minutes.

  8. Add cornstarch, rosemary, thyme, salt and pepper, stir to coat.

  9. Add broth and bring to a simmer; simmer until mixture thickens, about 3 minutes.

  10. Transfer turkey mixture to a 9-inch, deep-dish pan.

  11. Spread mashed potatoes over top and using the back of the spoon make decorative swirls over the top.

  12. Bake until potatoes are golden, about 30 minutes.
