Healthy version of Shepherd's Pie

Recipe Ingredients for Shepherd's Pie - Healthy

16 ounces ground turkey
1 medium onion
85 grams baby carrots
1/2 cup frozen peas
1/2 cup corn
1 tbsp olive oil
1 head,+small+4"+dia cauliflower
2 ounces fat-free milk
2 tbsp worchestershire sauce
1/2 cup beef broth, low-sodium

Recipe Directions for Shepherd's Pie - Healthy

  1. Saute chopped carrots and onion in pan.

  2. Add ground turkey until no longer pink.

  3. Add frozen peas and corn and cook until soft.

  4. Add worchestershire sauce and.

  5. Add beef broth and cook uncovered 10 minutes on low heat until softened, adding more broth or water to keep moist.

  6. Meanwhile, steam cauliflower florets. Add 2 oz. milk and blend to the consistency of mashed potatoes (can sub fat-free greek yogurt for milk).

  7. Place turkey and veggie mixture in 8X8 dish. Distribut mashed cauliflower on top.

  8. Bake in 400 degree oven until top is browned (about 30 minutes)
