Recipe Ingredients for Shepherd's Pie (Chicken)

5 medium red potatoes
2 tbsp. fat free half and half
1/2 cup carrots
1/2 cup celery
1/2 cup onion
1/4 cup red bell pepper
2 cloves of garlic
1 tsp salt
1 tsp pepper
1 tsp thyme
1/2 cup white wine
1/2 cup water
1/2 cup fat free half and half
2 cups chicken breast
1/4 cup parsley
2 tbsp. flour
1 tbsp. canola oil
1/2 cup frozen peas
1/2 cup frozen corn
1/2 cup chicken broth

Recipe Directions for Shepherd's Pie (Chicken)

  1. Peel and dice the potatoes. Boil until tender, drain and set aside in a bowl. Add 2 tablespoons of fat free half and half and mash until smooth.

  2. Peel the carrots and chop into a small dice. Dice up the onions, garlic, celery and red bell pepper. Toss the vegetables into a pot over medium heat with 1 tbsp. of canola oil. Cook for about 5 minutes.

  3. Sprinkle the flour over the vegetables and stir. Cook for about 2 minutes.

  4. Add the wine and water and stir to combine. Let the mixture thicken for a few minutes, then add the chicken stock, fat free half and half, salt, pepper and thyme.

  5. Stir and add the chicken breast, peas and corn.

  6. Cook until thickened- about 10 minutes.

  7. Spray a baking dish with cooking spray and add the mixture. Top with the parsley.

  8. Spread the mashed potatoes over the top and bake at 350 degrees for about 20 minutes. Serves 4-6
