Recipe Ingredients for Shepherd's pie with Cauliflower topping

16 ounce ground beef, extra lean (or turkey)
1 small zucchini, grated
4 ounces fresh mushroom, chopped
2 carrots, freshly grated
1 cup onion, chopped
2 stalks celery, chopped fine
1 head cauliflower
2 T. Butter
2 ounces skim milk
1 cup shredded cheddar cheese

Recipe Directions for Shepherd's pie with Cauliflower topping

  1. Brown meat and pour off any fat.

  2. Add grated veggies and saute for 5 minutes.

  3. Steam cauliflower, then put in food processor with butter and cheese.

  4. Put meat in dish.

  5. Top with cauliflower.

  6. Bake at 375 for 40 minutes. (1 hour if it is cold going in)
