I healthier alternative to traditional shepherd's pie, this one uses mashed cauliflower instead of mashed potatoes

Recipe Ingredients for Shepherd's Pie with Cauliflower Topping

3/4 lb. diet lean ground beef
1/2 onion, chopped
1 clove garlic, minced
1 carrot, chopped
1 1/2 teaspoons tomato paste
1/2 cup beef broth
1 1/2 teaspoons cornstarch
1/2 cup frozen green beans
1/4 cup frozen peas
6 cups cauliflower florets
2 ounces neufchatel cheese
1/4 cup non-fat milk
1 teaspoon olive oil
1/4 teaspoon salt
1 ground pepper to taste

Recipe Directions for Shepherd's Pie with Cauliflower Topping

  1. Brown meat.

  2. Stir in onions, garlic and carrots. Cook 5 minutes.

  3. Add tomato paste, broth and cornstarch.

  4. Bring to a boil, stirring constantly.

  5. Add beans and peas and cook to thaw.

  6. Transfer to casserole dish. Top with mashed cauliflower.

  7. Bake at 350o for 30 minutes.

  8. Mashed Cauliflower

  9. Cook cauliflower florets until very tender. Using a potato masher, mash the cauliflower with the cream cheese, milk, olive oil, salt and pepper until smooth and creamy.
