classic, lighter version of shepherds pie. Easy to customize with whatever you have on hand.

Recipe Ingredients for Shepherd Pie

2 cups mashed potatoes
12 oz ground beef
1 tbsp vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 cup corn, frozen
9 oz spinach, frozen (one box)
1 can green beans
1/4 cup all-purpose flour
1 1/2 cups skim milk
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Recipe Directions for Shepherd Pie

  1. Heat oven to 375.

  2. Prepare mashed potatoes (I usually use leftovers) and keep warm.

  3. Brown beef in saute pan, remove and drain.

  4. Saute onions and garlic in oil. When they begin to soften, stir in corn, beans, and thawed spinach to heat them up.

  5. Mix flour, milk, salt and pepper with a whisk, then pour into pan. Stir to combine and bring to a simmer, simmer for about 2 minutes.

  6. Layer ground beef, milk and veggie mixture, and mashed potatoes in a casserole. Bake at 375 for about 30 minutes or until potatoes get slightly brown on top.
