Healthy, vegan take on potato-topped pie

Recipe Ingredients for Shephard's Pie

3 large sweet potato
1 1/2 T olive oil
1/2 t salt
1/2 t pepper
1 1/2 c vegetable broth
1/2 onion
2 cloves garlic
1 1/2 c carrot
2 c broccoli
2 c lentils, mature seeds, cooked
1/2 t tarragon
1/2 t oregano
1/2 t parsley
1 T Worcestershire sauce

Recipe Directions for Shephard's Pie

  1. Boil, steam or microwave peeled sweet potatoes.

  2. In a bowl, mash sweet potatoes with 2 t olive oil, salt, pepper and a few tablespoons of vegetable broth.

  3. Next, saute onion in a pan with 1 t olive oil until softened, adding water if sticking. Add in garlic and saute for a minute.

  4. To pan, add carrot, broccoli and a cup of broth. When vegetables are tender, add cooked lentils, herbs, Worcestershire sauce and any remaining broth. Let cook for 5 minutes.

  5. Transfer lentil mixture to a baking dish.

  6. Smooth mashed sweet potatoes over lentils.

  7. Bake at 180 C for 30-40 minutes, or until sweet potatoes are lightly golden.
