Recipe Ingredients for Sheperds Pie

1 tbsp olive oil
1 carrot
2 stalks celery
1 oz salted butter
1 1/2 large onions
2 cloves garlic
1 lb minced lamb
1/2 pint stock
2 tsp plain flour
2 lb boiled potatoes
2 oz salted butter
3 oz skimmed milk
1 egg
1/4 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg

Recipe Directions for Sheperds Pie

  1. Finely chop celery and carrot.

  2. Fry in olive oil on medium heat until very tender (5 - 10 mins).

  3. Add 1 oz of butter and fry chopped onions until just starting to color.

  4. Finely chop / mince garlic (1 or 2 depending on taste).

  5. Fry for a min or two.

  6. Add Lamd Mince and fry util Mix starts to dry.

  7. Add 1/2 a pint of Lamb Stock.

  8. Simmer for an hour.

  9. Top up Lamb stock so the mixture is not too dry or wet.

  10. Mix Bisto powder (not in ingredients above) and flour with a little water and add to mix stirring constantly.

  11. Add salt and pepper to tatse.

  12. Simmer for 20 mins stirring occasionaly.

  13. Adjust seasoning.

  14. Pour mix into a good sized casarole dish.

  15. Peel potatoes cut into even 1 inch chunks and cook with a little salt until tender.

  16. Drains add Salt, Pepper, nutmeg to tatse.

  17. Add milk and remaining butter along with 1 egg and Mash then whisk.

  18. Place on top of Mix and Bake 180 degrees C for about 40 mins.

  19. Remove from ovben and rest for 5 mins.

  20. Serve....
