Recipe Ingredients for Sheperd's Pie with Asparagus

1 1/2 lbs. russet potatoes
2 oz. fat free half and half
2 T. parmesan cheese
1 c. asparagus
3 c. zucchini
8 oz. lean ground beef
14 oz. whole canned tomatoes, undrained and chopped
3/4 c. chopped green bell pepper
2 oz. white wine
2 T. flour
1 t. olive oil
1/2 c. chopped onion
2 garlic cloves
1 t. oregano
1 t. basil
1/4 t. thyme
1/2 t. salt
1/2 t. pepper
1 1/2 T. unsalted butter

Recipe Directions for Sheperd's Pie with Asparagus

Cook onion, garlic and beef in olive oil on medium-high heat until browned, stirring to crumble. Drain. Add oregano, basil, and thyme. Add zucchini and asparagus. Cook a few minutes, add flour, then gradually add wine. Stirring, add tomatoes and cook until thickened. Cube and boil potatoes until tender, drain and mash with half and half, 1 T. butter and parmesan. Keep aside. Spoon meat mixture into 2 quart casserole dish and top with mashed potatoes. Dot mashed potatoes with 1/2 T. butter and sprinkle with parmesan cheese. Bake at 375 until heated through, about 30 min. Broil for 3 min. to brown topl
