Shepard's Pie Recipe

Healthy and delicous Sheppard's Pie, made with store-bought puff pastry.

Recipe Ingredients for Shepard's Pie

225 g pastry dough
650 g ground beef
100 g sundried tomatoes
1/4 cup olive oil
1 large onion
3 tbsp parsley
200 g canned corn
400 g ground chicken
1 salt
1 pepper
10 g onion powder

Recipe Directions for Shepard's Pie

  1. Heat oil in a large saucepan over medium-high heat. Add onion, and cook, stirring, for 5 minutes or until soft. Add ground beef and cook, stirring to break up any lumps, then add the sun dried tomatoes, salt and pepper for 5 minutes or until the beef changes colour.

  2. Add the potatoes (peeled or not) to water and cook, stirring, for 2 minutes or until combined. Add salt and bay leaf to the water. Bring to the boil. Reduce heat to low and cook, stirring occasionally, for about 15 -30 (depends on the size of your potatoes) minutes. Drain well. Return to the pan with the butter. Use a potato masher or fork to mash until smooth. Add milk and use a wooden spoon to stir until combined. Taste and season with salt and onion powder.

  3. Preheat oven to 350F. Oil one bread pan, as you do when preparing to bake in it, then cut out 3/4 of you store-bought puff pasty, lay it in the pan so that the bottom of the pan and its sides are covered with the pastry. Bake for 10-13 minutes, until the pastry starts puffing and turning a golden colour. Do not fully bake it.

  4. Take the puff pan our of the oven and let cool for about 3 minutes. Spoon beef mixture bottom half of the pan, on top of the pastry . Top with mashed potato and use a fork to spread over beef mixture. Cover the mashed potatoes with the remaing raw puff pastry, selaing the edges with the baked edges. Bake in the preheated oven about 20 minutes or the top puff pastry turns a golden brown.

  5. Serve ammediately or also great warmed up and for lunches!
