A meal all by itself; but, best served with a tossed salad.

Recipe Ingredients for Shepards Pie

1/2 grams cooking spray
1 large red onion, diced
1 lb ground turkey
1 1/2 cups diced carrots
11 oz mexicorn
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cumin
1 tsp pepper
6 medium potatoes, peeled and diced
3 garlic cloves
8 oz chicken stock
2 tsp CHEESE - PARMESAN & ROMANO GRATED
1 cup shredded chedder cheese

Recipe Directions for Shepards Pie

  1. Preheat the oven to 375.

  2. Brown the ground turkey.

  3. Add the onion and half of the spices.

  4. Meanwhile, boil the potatoes.

  5. Add the mexicorn, carrots and garlic to the ground turkey mixture.

  6. Mash the potatoes with the turkey stock, add the remaining spices to the mashed potato mixture.

  7. Layer the olives on top of the ground meat mixture.

  8. Spread the mashed potatoes evenly over the ground meat mixture.

  9. Sprinkle with the parmesan and chedder cheese.

  10. Bake in a 375 degree oven until cheese is brown and bubbly. Approx. 45 min.
