If you bought pork tenderloin on sale and have leftovers from the roast, this is a great way to deal. Very soft and easy to swallow even with a dry mouth.

Recipe Ingredients for Shepard's Pie from Leftovers

2 lbs pork tenderloin
2 cups mashed potatoes
1 cup cream of mushroom soup
1 onion
4 large carrots
1/2 cup red wine
1/4 cup olive oil

Recipe Directions for Shepard's Pie from Leftovers

  1. Grind pork in meat grinder or food processor.

  2. Saute onions in oil until soft. Add meat and saute.

  3. Cut up carrots (small bites) and boil until tender. Add to meat mixture.

  4. Stir in soup and red wine. Simmer.

  5. Heat mashed potatoes (microwave is best).

  6. Serve in bowls with scoop of mashed potatoes on top.
