I don't think this is much different than any other basic Tabouleh recipe. But here's how I do it. Very super tasty

Recipe Ingredients for Shelly's Tabouleh

1 3/4 cups Bulgur Wheat
14 oz Chicken Broth
3/4 cups Extra Virgin Olive Oil
3/4 cups Lemon Juice
4 tbsp Parsley, finely chopped
4 tbsp Mint, finely chopped
28 oz Canned Diced Tomatoes

Recipe Directions for Shelly's Tabouleh

  1. Prepare bulgur wheat according to package directions (usually boil the liquid and add to dry wheat; allow to soak for 2 hours).

  2. Drain tomatoes and add to wheat.

  3. Add chopped parsley and mint.

  4. Combine extra virgin olive oil and lemon juice and add to taste.

  5. This dish tastes good immediately but it is GREAT the next day. Keeps well in refrigerator for several days.
