A tasty shepherds pie, not very light i'm afraid.

Recipe Ingredients for Shelly's Shepherds Pie

3 pounds beef chuck roast
1/4 cup frozen peas
1/4 cup frozen corn
1/4 cup frozen carrots
6 cups mashed potatoes

Recipe Directions for Shelly's Shepherds Pie

  1. Cook chuck roast the way you'd normally cook a pot roast. Low and slow with carrots, onion and some herbs.

  2. When the meat is falling apart, pull out of the cooking liquid and allow to cool. While the roast is cooling, boil the cooking liquid until is has reduced by half.

  3. In a small bowl, mix two tablespoons of corn starch with two tablespoons of very cold water. Add to rapidly boiling cooking liquid and allow to thicken.

  4. When meat is cool, shred the meat into a large casserole dish. Ladle on some of the thickened gravy to keep the meat moist.

  5. Layer veggies on top of the meat. Cover with mashed potatoes. Top with cheese if desired.

  6. Bake at 350 for about 30mins until casserole is bubbly.
