Shell pasta with fresh mozzarella, grape tomatoes, and turkey meatballs.

Recipe Ingredients for Shells with Mozzarella and Tomatoes

10 ounces ground turkey
1/4 cup parmesan cheese
1/4 cup breadcrumbs
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1/8 cup dried parsley
2 tablespoons garlic
8 ounces medium shell pasta
1 cups water
2 pints grape tomatoes, halved
4 ounces fresh mozzarella
1/4 cup parmesan cheese
2 cups chicken stock
1/4 cup dried parsley

Recipe Directions for Shells with Mozzarella and Tomatoes

  1. Bring large pot of salted water to boil. Mix together all ingredients for meatballs, mix just until combined. Measure out meatballs using level tablespoon, then divide in half and form into meatballs.

  2. In large skillet, add drizzle of olive oil over med-hi heat. Add meatballs and sauté on each side (want outside of meatballs to be well browned). Once browned, add chicken stock to pan. Bring to boil, then reduce heat to medium and let meatballs simmer for 7-8 minutes (while pasta is cooking), until about 1 cup liquid left.

  3. Cook pasta for 10-11 minutes, drain. Add meatballs and sauce, parmesan cheese, and parsley. Just before serving, add tomatoes*, mozzarella, and salt and pepper to taste.
