Peanut butter -based protein bars with fruit and oats

Recipe Ingredients for Shelf-stable protein bars

760 g natural peanut butter
3 c rolled oats
90 g soy protein isolate
3 c 2% milk
1/4 c dried blueberries
1 c dried apricots
1 c raisins

Recipe Directions for Shelf-stable protein bars

  1. Chop the apricots finely

  2. Mix all ingredients together. Mixture will be thick, but should be just spreadable.

  3. Spread in greased baking pan or on non-stick cookie sheet

  4. Bake on low heat until springy to the touch

  5. Cut into bars

  6. Transfer to food dryer. Dry at 135 F overnight or until done - sort of crispy-ish and leathery-ish.

  7. Package in small amounts in plastic zipper storage bags, removing all the air before sealing.
