Sheldon's Ceviche Recipe

A delicious ceviche. Its supposed to be made with halibut, but i used sushi grade tuna. Just make sure the fish is fresh and a high grade (able to be eaten raw.) The lime juice cooks the fish a little.

Recipe Ingredients for Sheldon's Ceviche

6.4 oz Tuna
2 fl oz Lime Juice, Canned Or Bottled, Unsweetened
1/4 tsp Kosher Salt
2 fruit without skin and seeds Avocados
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 pepper Peppers, Jalapeno
0.5 small raw Red Onion
1 serving, raw Cilantro
3 medium Tomatillos
0.25 cup (8 fl oz) Water
1 clove Garlic

Recipe Directions for Sheldon's Ceviche

  1. TOMATILLO SALSA (to make this properly, use 2 cups tomatillos, 1/2 cup water, 1/4 bunch cilantro, 1 clove garlic, 1/2 jalapeno, and 1.2 tsp kosher salt. the ceviche calls for half of this. the recipe above already cuts this in half so there is no salsa left over)

  2. Remove the husks and any dark spots off the tomatillos and place in a blender

  3. add water, cilantro, garlic, (jalapeno), and salt.

  4. puree on high until smooth.

  5. Refrigerate until chilled. Can be held for up to 2 days

  6. CEVICHE

  7. Chop the fish into 1/8" chunks

  8. In a large bowl, toss the fish with the lime juice and a few pinches of salt.

  9. Add chopped avocados, chopped tomatoes, diced jalapeno, diced onion, chopped cilantro, and about half the salsa (or all of it if using the amounts given in the main recipe)

  10. Quickly toss a few more times so everything is mixed

  11. Serve immediately
