Recipe Ingredients for Shchi- RussianTurnip, Cabbage, and Carrot Soup (Erin's)

1 large onion
2 cloves garlic
1 1/2 T canola oil
3 medium carrots
2 medium turnips
3 stalks celery
1 T dried dill
1 t thyme
10 pieces dried apricots
1/2 cup raisins
6 cups cabbage
4 cups chicken broth, fat free
6 cups water
28 oz diced tomatoes
1 T honey
1 T cider vinegar
1 t salt
1 1/2 t black pepper
8 oz firm tofu

Recipe Directions for Shchi- RussianTurnip, Cabbage, and Carrot Soup (Erin's)

Half of oil into pot- cook veg. Add liquid and tomatoes, boil, add honey, cider, salt and pepper. Simmer 30 min. Pan fry cubed tofu in the rest of the oil and a splash of vinegar. Add to soup at end. Serve with sour cream or plain yogurt.
