My fiance's favorite! A tomato and white bean soup with macaroni pasta & cilantro.

Recipe Ingredients for Shawna's Pasta Soup

4 oz cilantro, chopped
6 oz macaroni
1 onion, chopped
28 oz crushed tomatoes
14 oz cannelini beans
6 cloves garlic, chopped
2 tsp red pepper flakes
1/2 cup white wine
15 oz chicken broth
1/2 tsp salt
2 1/2 tblsp olive oil

Recipe Directions for Shawna's Pasta Soup

  1. Cook pasta and save a couple cups of pasta water before draining.

  2. Heat olive oil and saute onion and garlic until onion is translucent.

  3. Add cilantro for 1-2 minutes.

  4. Add white wine and cook until 1/2 is gone.

  5. Add tomatoes and broth. Bring to a boil and simmer 5 minutes.

  6. Add beans, salt and red pepper flakes. Bring to boil, lower heat, cover and simmerm 1/2 hour.

  7. Add pasta. Add pasta water to desired consistency.

  8. Serve with parmesan cheese on top (not included in calorie count!)
