Recipe Ingredients for Shawna Sloane's Chicken Adobo

4 pound chicken thighs, deboned
1 tsp vegetable oil
2 cloves garlic, minced
1 cups soy sauce
2 cups white vinegar
1 1/2 cups snow peas
1/2 onion, julienne

Recipe Directions for Shawna Sloane's Chicken Adobo

  1. In a large skillet, heat the vegetable oil and garlic over med-high heat until sizzling. Brown chicken on both sides. Discard extra fat.

  2. With chicken still in the pan, add in the vinegar and soy sauce. Cover with a lid on medium heat. Cook until boiling and then turn to lower and cover again.

  3. Let the chicken simmer for two hours, flipping the chicken in between. Once the meat is falling off the bones (if bone in), then discard of all the chicken fat/skin and bones. Shred the meat in the skillet with the sauce. Add in the vegetables, cover with a lid and lightly simmer until the veggies are tender. Serve over rice
