Shaved Broccoli Salad Recipe

Summer-friendly and light. Add some halved grape tomatoes directly to the salad or slice some Roma tomatoes on the side to really perk this up. A nice substitute for that belly-enlarging potato salad. ***NOTE*** The raisin content make this recipe high in sugar. Substituting another fruit, dried or fresh, may reduce the sugar content.

Recipe Ingredients for Shaved Broccoli Salad

4 cups broccoli or approx 1 med head, cut stem approx 2 inches below head and reserve stem for stock
3 ounces baked tofu
3/4 cup raisins or craisins
1/2 cup chopped walnuts
1 1/4 tbsp sunflower seeds (may be toasted)
2 tbsp extra virgin olive oil
1/2 tbsp sesame oil
1 tbsp rice vinegar
1/8 tsp kosher salt
1/8 tsp garlic powder

Recipe Directions for Shaved Broccoli Salad

  1. In a food processor, shave the broccoli head and reserve the extra stem for stock. Cut the Baked Teriyaki tofu into 3/4 inch squares. In a large mixing bowl, combine all dry ingredients.

  2. In a small bowl, combine olive and sesame oils, vinegar, salt and garlic powder.

  3. Pour this mixture over the dry ingredients and fold together.

  4. This is best if left refrigerated for 2 or more hours before serving to let the ingredients mix.
