This is one of my favorite recipes to make. It makes 12 servings. Just cut the ingredients in half if you don't want leftovers.

Recipe Ingredients for Shaun's Chicken Cacciatore

6 lbs chicken breast
1 cup all-purpose flour
1/4 cup vegetable oil
3 bell peppers
1 large onion
4 cloves garlic, crushed
32 ozs. whole tomatoes, drained
16 ozs. tomato sauce
3 cups mushrooms, sliced
1 tsp dried oregano
1/2 tsp dried basil leaves

Recipe Directions for Shaun's Chicken Cacciatore

  1. Coat chicken with flour

  2. Heat oil in large skillet over medium-high heat. Cook chicken in oil for 15 to 20 mins or until brown on all sides; Drain.

  3. Cut bell peppers and onions crosswise in half; cut each half into fourths. Stir bell peppers, onions and remaining ingredients into chicken skillet. (I normally drain the chicken and put it in a bigger wok and add the ingredients). Heat to boiling; reduce heat. Cover and simmer for 30 to 40 mins
