Filling and flavourful breakfast that can be made on the weekend and defrosted during the week. Great with lean turky sausage!

Recipe Ingredients for Shannon's French Toast Muffins

8 medium Egg, Whole
6 serving Classic White Bakery Buns
2 tsp 100% Pure Canola Oil
0.75 cup Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for Shannon's French Toast Muffins

  1. Preheat oven ti 400 degrees. Grease muffin tins. In a very large bowl, mix 8 eggs, 1tbs cinnamon, the seeds from 1 vanilla bean, 1 tsp salt, 1/4 c. of milk.

  2. Cut 6 white buns in small cubes.

  3. Combine with wet mixture and allow all bread to become saturated. Spoon into muffin tins. Bake for 16 minutes and you may brush the tops with the remainder of the oil. Return to oven for 3 more minutes. Eat. Makes 10 muffins.
