Recipe Directions for Shane's Vegetable Frittata

  1. In a cast iron skillet, heat oil and add 3/4 of a medium sweet yellow onion.

  2. Saute 1 minute and add 3 minced cloves of garlic.

  3. Saute 30 seconds.

  4. Add 6 halved grape tomatoes, 1 medium diced red bell pepper, 8 torn spinach leaves, 2 Tbsp finely chopped broccoli, and 6 torn basil leaves. Add 1/2 tsp salt.

  5. Saute for 3-5 minutes.

  6. Add 4 beaten eggs and lower heat. Allow to set, about 4-10 minutes. Sprinkle 1/4 tsp black pepper, 1 Tbsp chopped parsley, and 2 oz shredded sharp cheddar on top of egg mixture. Let sit 30 seconds, then remove to plate.
