Found in March 2010 Parents magazine. We had this yummy green soup for dinner last night and it was a hit with all four of us!

Recipe Ingredients for Shamrock Soup

2 cups chicken broth
6 green onions, sliced
4 cloves garlic, crushed
1 lb frozen peas
10 oz frozen spinach, defrosted and squeezed dry
1/3 cup light cream
1 dash of salt and pepper

Recipe Directions for Shamrock Soup

  1. In a large saucepan, add chicken broth, green onions and garlic. Bring to a boil and cook until green onions are tender, about 1-2 minutes.

  2. Add peas, salt and pepper. Cover and cook until mixture boils. Add spinach. Cook until warmed through, about a minute. Add cream. Remove from heat and puree in blender.
