Great Israeli dish that is easy on the budget, the waist line and the sense of guilt. Eat with pitas.

Recipe Ingredients for Shakshuka

1 tbsp Olive Oil
3 pepper Peppers, Jalapeno
1 medium (2-1/2" dia) Onions
5 clove Garlic
1 tsp Cumin
28 oz Crushed Tomatoes, Organic
0.75 cup, crumbled Feta Cheese

Recipe Directions for Shakshuka

  1. Saute chopped onions, garlic and jalapenos until the onions are translucent.

  2. Add cumin and allow to toast.

  3. Add tomatoes and simmer for 15 minutes. (If you use 'low quality' tomatoes and they taste tinny, try adding some baking soda to neutralize some of the acid.) Add parsley.

  4. Poach the eggs, either in the sauce (crack around the pan and spoon sauce over the whites to encourage cooking) or on the side.

  5. Spoon an egg and sauce into a dish. Serve with crumbled feta and pitas.
