Shakshuka Recipe

Poached eggs in spicy tomato sauce. This is a version I improvised using whatever was in my kitchen.

Recipe Ingredients for Shakshuka

1/2 tbsp extra virgin olive oil
1 small yellow onion
1/2 medium scallion
1/2 cup chopped crimini mushrooms
1 tbsp chopped chili peppers
4 cloves garlic
1/4 tsp cumin seeds
8 g za'atar
6 large raw eggs
8 oz canned tomato sauce
12 oz low fat bolognese sauce

Recipe Directions for Shakshuka

  1. Slice the onion.

  2. Chop the garlic, scallion, mushroom and chilis.

  3. Saute all the vegetables in the oil on medium heat until the onions are caramelized.

  4. Add tomato sauces, cumin and za'atar to the pan. Stir occasionally until small bubbles form.

  5. Break eggs onto tomato sauce. Space them as evenly as possible.

  6. Cover skillet for 5-10 minutes.

  7. Baste each egg with some liquid from the sauce.

  8. Serve immediately in a bowl or on rice; store the leftovers.

  9. Optional: throw in chunks of feta cheese.
