Low Fat, Easy to make, easy to freeze, and reheat... Serve with your normal taco toppings. Be careful not to overbake!! (add fresh diced tomatos with sauted onions and bell peppers and add as another "layer" to add color and additional flair to the lasagna...my family is too picky and those items are on the "we won't eat list")

Recipe Ingredients for SGBear98's Mexican Chicken Lasagna

16 oz chicken breast
7 6" tortillas
6 tbsp salsa
8 oz kraft fat free cheese
12 tsp taco seasoning mix (1 pk)
1 1/4 cup of water

Recipe Directions for SGBear98's Mexican Chicken Lasagna

  1. pan fry chicken with pam cooking spray

  2. set aside to cool

  3. once cool shred chicken

  4. place shredded chicken back in pan and mix with 3/4 pk of taco mix and 3/4 water

  5. hold 1/4 pk of mix for sauce.

  6. bring chicken to a simmer till thickens then add salsa and mix

  7. spay bottom of baking pan with pam cooking spray

  8. cut 1 tortilla into 4 triangles

  9. layer bottom of pan with 2 whole tortillas and 2 triangles( on the middle sides)

  10. then the chicken mixture, (tomatos and sauted veggies if desired) and then a thin layer of cheese

  11. new layer 2 whole tortillas, then chicken, (sauted veggies), then cheese

  12. in a sperate pan mix 1/2 cup of water with remaining taco seasoning, bring to boil, then simmer till thickens

  13. then top with 2 whole tortillas and the remaining 2 triangle pieces (remaining sauted veggies) and pour sauce evenly over whole dish

  14. top evenly with remaining cheese

  15. bake 15-20 minutes in oven @ 375

  16. makes 8 servings
